Open Fodder is the open source engine available (GitHub - where we could expect port for AmigaOS?), which allows to run Cannon Fodder in modern operating system - currently we have versions for Windows, Linux, OpenBSD and RetroPie. We have there also map creator. You can plan demo version and also versions available in GOG service. There is possibility to use data from Amiga version.
